Leah's Take on Sugar Cookies

It has been a week, and I have been in need of some therapy in the kitchen. I love baking cookies, especially sugar cookies. They are so versatile, and you can have a lot of fun experimenting. That being said, here is my take on the classic sugar cookie.

What you will need:
 1 medium mixing bowl
 1 large mixing bowl
 Measuring spoons ( 1/4 teaspoon, 1 teaspoon )
Measuring cups ( 1 cup,)
Hand mixer, stand mixer, spoon, or your impeccably clean hands.
Cookie sheet

Ingredients:
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cup sugar
1 1/2 sticks unsalted butter softened
2 teaspoons vanilla
1 large egg
Pre-heat oven to about 345 or 325 if gas oven
Optional but definitely recommended: Chopped dried cranberries and chopped sliced almonds.

Sift your flour, baking powder, and salt together in your medium bowl.

Beat in your butter sugar, vanilla, and large egg into a large bowl ( If you're using a stand mixer, use the paddle attachment)  now combine your dry mixture to your wet.

* Leah's baker tip* If no time for softening butter, use a cheese grater at the second smallest grate, and grate your butter for easier mixing results.

Once thoroughly mixed together :

Scoop some dough balls and sheet them:

Bake for about 8-10 minutes, checking regularly. Remember these are supposed to be chewy, overcooking would be a bummer.

Yay! If you're enjoying chewy sugar cookies you did it!
